The other night my wife and I took our son out to Maggiano's to celebrate his 17th birthday. We had a great time and enjoyed a fabulous meal. To top the meal off, we had Vera's Lemon Cookies. Everyone enjoyed the cookies so much that I decided to try to duplicate the cookie. The 3 of us beleive these cookies are even better than Maggiano's. These have just a little more lemon taste than Vera's Lemon Cookies. You could always cut back on the lemon juice in the frosting if you wanted.

These crackers are easy to make and go well with your favorite cheese or spread. One of my favorites is red pepper hummas. These packed full of fiber and protein! Your kids don't need to know they are good for them.
