Lemon Cookies to Die for

The other night my wife and I took our son out to Maggiano's to celebrate his 17th birthday. We had a great time and enjoyed a fabulous meal.  To top the meal off, we had Vera's Lemon Cookies.  Everyone enjoyed the cookies so much that I decided to try to duplicate the cookie.  The 3 of us beleive these cookies are even better than Maggiano's.  These have just a little more lemon taste than Vera's Lemon Cookies.  You could always cut back on the lemon juice in the frosting if you wanted.

Did you know that 80% of Americans eat pizza more than twice a month?  This is a very simple and “lower” calorie version of your favorite pizza. Of course if you want to cut more calories and fat you can use low fat or even whole wheat tortillas.  In this recipe I used small flour tortillas by La Banderita.

For those of you watching your diet, this is a healthier version of chicken fettuccine.  We've taken some of the bad fat out and reduced the calories to 462 for 1 cup of pasta and 1 cup of sauce.  If you want to step up healthy eating a notch, use whole-wheat pasta.  Add your favorite vegetable and side salad for a healthy balanced meal.

This Ravioli dish is easy to prepare and full of flavors your whole family will enjoy.  Yes, even the kids!  Don't be scared of the 3 hour cook time.  The prep time is only 10 minutes.  While the sauce is simmering to bring out all the flavors, you can do house chores, play with your kids, or take a short nap; whatever you want to do.  I like making my own sauces so I control the ingredients.  You'll notice there's no sugar or salt in my recipe (yes, some peple add a little because they haven't broken the "habbit").
