Out of this World Ravioli

This Ravioli dish is easy to prepare and full of flavors your whole family will enjoy. Yes, even the kids! Don't be scared of the 3 hour cook time. The prep time is only 10 minutes. While the sauce is simmering to bring out all the flavors, you can do house chores, play with your kids, or take a short nap; whatever you want to do. I like making my own sauces so I control the ingredients. You'll notice there's no sugar or salt in my recipe (yes, some peple add a little because they haven't broken the "habbit").
Ingredients:
1 medium white onion, diced
4 garlic cloves, minced
1 (28oz can) diced tomatoes, not drained
1/3 cup carrots, grated
1/3 cup celery, chopped
1/2 red bell pepper, chopped
1 cup fresh mushrooms, chopped
1 tbsp dreid oregano
2 tbsp dried parsley
1 tbsp dried basil leaves
1/2 cup EVOO (Extra Virgin Olive Oil)
1 package frozen ravioli (Rosetto brand or your favorite brand)
Directions
In a medium size sauce pan, saute onion and garlic over medium-high heat until they start to become clear.
Add tomatoes, carrots, celery, red bell peppers, mushrooms, oregano, parsely, basil, and EVOO. Bring to boil and reduce heat to medium-low.
Simmer for at least 1 hour however, 3 hours or more brings out the bold flavors.
Option Step
The sauce will be chunky and full of flavors. some kids don't like seeing all the veggies. They're "yuky". Blend the indredients in a food processor or blendef and they will eat it like it's going out of style.
Follw the directions for your frozen Ravioli - Most packages have serving sizes. Use the serving size for 5 people. For example my package of Rosetto brand says 9 Ravioli per serving. For 5 people, I cooked 45 Ravioli.
Serve sauce over cooked Ravioli.
