Blueberry Banana Muffins

Cook Time: 15 minutes

Makes 12 servings

 

Ingredients

1 cooking spray 

2 cup whole wheat flour 

1/3 cup brown sugar 

1/2 tsp ground cinnamon 

2 tsp low sodium baking powder 

1 tsp baking soda 

1 1/2 cup fresh mashed banana 

4 egg whites 

1 tsp vanilla extract 

1 cup Blueberries, fresh or frozen

Preheat oven to 350°F.

Lightly coat  12-cup muffin pan with cooking spray.

In large bowl, mix whole wheat flour, brown sugar, cinnamon, baking powder, and baking soda. 

In separate bowl, mix the bananas, egg whites, and vanilla extract.

Combine banana mixture into flour mixture until smooth. 

Fold in blueberries and spoon the batter into prepared muffin pan.

Bake 10 minutes, or until a toothpick inserted in center comes out clean.
