Ingredients

  • 1 lb fresh beets, stems on Click to add to your shopping list
  • 1 tbsp unsalted butter Click to add to your shopping list
  • Salt to taste Click to add to your shopping list
  • Ground black pepper to taste Click to add to your shopping list

Instructions

Wash beets well, cut off all but about 1/2 inch of stems.

Wrap in foil and bake at 400F for 60 - 90 minutes or until knife can be easily inserted into center.

Remove from oven, peel, chop roughly and toss with butter, salt and pepper.
