Heat oven to 375 F.
Rinse and dry fillets.
Wipe each fillet with EVOO, salt and pepper to taste. Place each fillet on a heavy piece of foil
Add onions, red and yellow peppers to each fillet and wrap foil around each fillet and seal the edges.
Bake at 375 F. 30 to 40 min, or until done.
