Ingredients

  • 4 sheets of aluminum foil (to wrap fish) Click to add to your shopping list
  • 4 tsp EVOO (Extra Virgin Olive Oil) Click to add to your shopping list
  • Salt to taste Click to add to your shopping list
  • Ground black pepper to taste Click to add to your shopping list
  • 1 onion, minced, divided into 4 equal portions Click to add to your shopping list
  • 1 red bell pepper, chopped, divided into 4 equal portions Click to add to your shopping list
  • 1 yellow bell pepper, chopped, divided into 4 equal portions Click to add to your shopping list

Instructions

Heat oven to 375 F.

Rinse and dry fillets.

Wipe each fillet with EVOO, salt and pepper to taste. Place each fillet on a heavy piece of foil

Add onions, red and yellow peppers to each fillet and wrap foil around each fillet and seal the edges.

Bake at 375 F. 30 to 40 min, or until done.
