CURRIED BROCCOLI CAULIFLOWER CARROT

Ingredients

  • 2 carrots, peeled, cut into 1 inch pieces Click to add to your shopping list
  • 1/2 lb cauliflower, cut into florets Click to add to your shopping list
  • 1/2 lb broccoli, trimmed Click to add to your shopping list
  • 1/2 cup chicken broth Click to add to your shopping list
  • 1 tsp curry powder Click to add to your shopping list
  • Salt to taste Click to add to your shopping list
  • Ground black pepper to taste Click to add to your shopping list

Instructions

Bring an inch of water to boil in a steaming pan. Meanwhile, trim the carrots, cauliflower and broccoli and transfer to the steamer basket, carrots first, cauliflower second, broccoli third. When the water boils, place the basket inside the pan, COVER and let steam for exactly five minutes. When the five minutes is up, turn off the heat, leave the cover on and let rest for 5 minutes for the vegetables to finish cooking.

Heat the curry broth ingredients in a small dish in the microwave.

When the vegetables are done, drain the water, return the vegetables to the hot pan and gently stir in the curry broth.

Serve and enjoy!
