Three Cheese Beer Dip

Ingredients

  • 1 1/2 cups Monterey Jack Cheese, shredded, room temperature Click to add to your shopping list
  • 1 1/2 cups Sharp Cheddar Cheese, shredded, room temperature Click to add to your shopping list
  • 8 oz uncooked chorizo sausage Click to add to your shopping list
  • 1 cup onion, chopped Click to add to your shopping list
  • 1 green onion, chopped Click to add to your shopping list
  • 2 garlic cloves, minced Click to add to your shopping list
  • 2 tbsp all-purpose flour Click to add to your shopping list
  • 6 oz low-fat cream cheese Click to add to your shopping list
  • 1 cup beer Click to add to your shopping list
  • 1 tsp hot sauce Click to add to your shopping list

Instructions

Allow Monterey Jack and Sharp Cheddar cheese to sit at room temperature.

In a saucepan cook and stir sausage, onions, and garlic until sausage is cooked through. Use a spoon to break up meat as it cooks.

Stir in flour, cream cheese and beer. Cook and stir until bubbly.

Gradually stir in Monterey Jack and Sharp Cheddar cheese a little at a time stirring until cheese is melted.

Stir in 1 tsp hot sauce.

To serve, place dip into a 2 quart slow cooker on warm setting for up to 4 hours. If necessary stir in additional beer or milk to thin.

Serve with tortilla chips.
