Turkey Quesadillas

Ingredients

  • 2 tbsp EVOO (Extra Virgin Olive Oil) Click to add to your shopping list
  • 1 cup green bell pepper, chopped Click to add to your shopping list
  • 1 cup onion, minced Click to add to your shopping list

  • 2 tsp ground cumin Click to add to your shopping list
  • 2 cups chopped cooked trukey breast Click to add to your shopping list
  • 1 (14.5oz) can diced tomates, drained Click to add to your shopping list
  • 1/4 cup fresh cilantro, minced Click to add to your shopping list
  • 1/4 tsp salt Click to add to your shopping list
  • 1/4 tsp ground black pepper Click to add to your shopping list
  • 8 (8 inch) fat-free flour tortillas Click to add to your shopping list
  • 3/4 cup monetery jack cheese, shredded Click to add to your shopping list

Instructions

Place oil in a large skillet over medium high heat until hot. Add chopped pepper, onion, and garlic; cook 3 minutes, stirring often.

Add cumin, and cook 1 minute, stirring often.

Add turkey and tomato; cook 3 minutes, stirring often.

Stir in minced cilantro, salt, and ground pepper.

Boil water in a medium sauce pan. Place a screen over boiling water.

Place a tortilla shell on the screen for 10-15 seconds per side set aside, keep warm and repeat until all shells are warmed.

Place about ½ cup turkey mixture on half of each tortilla. Sprinkle cheese evenly over turkey mixture on tortillas; fold tortillas in half and serve.
